17 Quick & Easy Spring Dinners

Just what I was looking for. I didn't have anaheim but did have a jar of fire roasted green chilies. I tried to make due with what I had on hand. It has a nice spice to it. I'd make again with less chili powder, I didn't have any Bay leaves. I'm serving over lime rice, cilantro and sour cream. it's a keeper and hope to make it as recipe is written next time.

I forgot my son needed baking for school so finding a recipe with everything I had on hand was awesome. My only tweak was I used vanilla coffee creamer instead of milk as I didn't have vanilla. Also added 1/4tsp of salt and dark chocolate chips. They turned out fantastic!
