We used this recipe as a base: Made the quiche crustless, left out the green chile, and subbed Gruyère for cheddar. Shredded the zucchini and squeezed out the water. Seasoned with herbes de Provence and some chopped parsley. Put a bit of the shredded cheese on top towards the end and browned briefly under the broiler. It was light and fresh. I’d definitely make again. Thanks for the inspiration!

Didn't use cream of mushroom. Don't understand why that was used. Mine still turned out fab!
