I soaked my cut onions in ice water for 30 minutes and peeled off the inside skin and had them dry on a towel for about 20 minutes for the batter to stick better to the flour, and OH MY GOODNESS they were so good! I will be making this again, also my hubby could not keep his hands off of them while I was making them!
