Very good! I have made this many times over the years and won the category of best looking chili at an informal chili cook-off at work. They were all meat eaters but it also gave it points as being one of the best tasting as well.

Definitely concur that the correct tweak is increasing butter from 2 Tbsp to 1 stick (8 Tbsp), and increase flour from 1/2 cup to 3/4 cup. I also tried 2 versions: 1 with finely chopped (blender) pecans, and another with both finely chopped and lightly chopped pecans. The lightly chopped pecans add the delicious texture and crunch that I remember from the Abilene Country Club. Filling the mini-muffin tins about half-full gives more crisp coating that carmelizes as it cooks. And produces more muffins! Thank you SO much for providing, and tweaking, this recipe.
