Lemon Chicken Rice Soup
Very nice, but like most recipes, I modified it a bit. Here are the changes I made: 1/2 cup each of the veggies and I diced them quite small, about 1/4 inch square. 1/2 cup rice 5 Tablespoons lemon juice 3 bullion cubes 1 12.5oz can chicken breast, drained and chopped

I am not a custard make, so more specifics about the timing for making the lemon curd would be helpful. I started with a boiling pot of water, with double boiler, but it took far longer than 7 minutes for the ingredients to thicken. It's now been over 5 hours in the fridge and the lemon filling is still as jiggly as when I first poured it into the pre-baked pie shell.

This recipe is perfect! 1 cup banana, 1 cup zucchini, and 1 cup pumpkin. The only extra thing I did was add chocolate chips. Delicious!!
