Fig Aniseed Muffins
I made a coulbe batch to get a good yield (23) in one effort. The only substitution was almond milk, considering a dairy-intolerant family member. This is a great, all-around muffin as the anise flavor is just a hint. These are not overly sweet, just a nicemuffin anytime. They bake up nice and tall w/ the cracking at the crown and great crumb. I baked them for 21 min. I should say that I ran out of anise extract at 3+ tsp (needed 4 tsp.) . and didn't bother to shop for more. Next time, I'll use vanilla extract and use ground pecans for the anise seed. I liked everything about this recipe---texture, crumb, low sugar, and versatility.
