I have made this recipe now over thirty times. It’s delicious but I have made some modifications. Now #1, I always make 3 loaves at a time so I triple it. I have a stand mixer so much easier. I don’t use margarine but real butter. Next I split the sugar half white and half brown. I liberally rub butter on my loaf pan and sprinkle it with cinnamon and sugar. Then I take a mashed potato masher and mash the bananas to get the amount I need. Then I whip it on high speed so it gets a lil fluffy. Put in loaf pans 2/3 full then bake until it smells great. Use a butter knife and stick it in until done-ness reveals no batter on the knife. Then it’s done. It usually take a much longer time but I still recommend 350.
This is or go to dish for celebrations. I have to make for my boys’ birthdays every year.
