Originally Pasta Carbonara is made with guanciale. May work with pancetta but by no means bacon which has a total different way of making. It's smoked vs just cured.

Turned out excellent!! I did add some pre cooked whole grains to it after the first proofing. I may add one extra tablespoon of molasses next time but it's fantastic as written!!
