Aunt Nell is a culinary genius!! These are delicious! I don't care for the taste of self-rising flour, so I never have it. I improvised with 1/2 teaspoon of salt and 2 teaspoons of baking powder. I had some half and half that needed using up. That went to the 3/4's mark on the cup and I finished out with 2 percent. They rose beautifully, browned nicely and have a light, fluffy texture. The batter was thin, but baked out perfectly with nice muffin tops. They took around 30 minutes in the most basic of gas stoves. (one step up from a wood burner!). I cannot believe no one has rated these yet. Thanks for the recipe!
