Amaranth for Breakfast
This is the first time I’m cooking amaranth. I substituted 2 cups of soy milk and a cup of water. I let it boil then simmer for 25 to 30 minutes. Once finished I added 2 tablespoons of honey, half teaspoon of cinnamon, and a teaspoon of vanilla flavor and added raisins. The same way I make oatmeal and it is delicious. I need fiber and I need to build muscle.
