Just made this and it was super quick and easy! I used half & half w/ACV to imitate buttermilk instead of milk or water. I ommited the added sugar to the batter but I think next time I'm going to keep it and add cardamom or nutmeg to the batter as well! I was also surprised at how much the batter rose, the pan raw was about half filled and baked it nearly doubled. Good breakfast or snack cake!
Would you just swap the four 1:1 for gluten free or do you have any other recommendations when doing gluten free?
Cook for 10 or 11 mins for golden brown
