do you drain or squeeze "dry" the grated apples or use all grated apples with juices?

This was a very nice, smooth, low calorie dessert. Just enough cream cheese to give it a cheesecake flavor, lighter/fluffier than a standard pumpkin pie. Almost a mousse consistency. I did sub 1/3 of the sugar with brown sugar, but otherwise followed the recipe as written. Came out of the oven seeming like it wouldn't set up well, but after a few hours in the fridge it held up to slicing. Excellent alternative to a regular pie or cheesecake.
