This has become our go-to pancake recipe! They really turn out high and fluffy while maintaining a cakey, light texture. I like to melt the butter first--no seed oils here. Easy and simple, but you can also add-in a little cinnamon, as well as a tsp of vanilla extract (or even a scoop of protein powder, if so inclined). Thanks, Pete!
