Panera Broccoli Cheese Soup
Blanch the broccoli for 5 min (boil for 5 then strain off the water and cool quickly) to remove the bitterness from the broccoli. Either that or use frozen broccoli (which has already been blanched). Makes a really nice difference! Also you can slowly heat the milk and half and half to just below the simmering point and then add it to avoid curdling. Last thing, I recommend using mild cheddar. Sharp cheddar introduces some bitterness which Panera’s soup avoids. Just a touch of nutmeg works best as well.
