Is this recipe too delicate to make into a tiered wedding cake?

Both my husband and I liked this. I used both catfish and tilapia However, I didn’t get much of a lemon pepper taste. I need to increase the lemon pepper and/or decrease the amount of flour and cornmeal a bit. There was quite a lot of that. This would also be good, i think, with Cajun seasoning.
