I have been making this recipe for years. No way it could make 3 nice loaves. I tried two scrawny loaves once or twice but eventually I made it into one small loaf. Today, I had a mishap. I was talking on the phone while making the recipe. Always a big mistake. I forgot to add the yeast. Back in the stand mixer it went. I put in 3 teaspoons of yeast instead of the 2.25 in a standard packet. Added enough water so that I had a chance of mixing the yeast into the dough. After mixing and kneading, I added a touch of extra bread flour to account for the extra water. Just enough for the dough to come together. For the first time ever the dough actually tripled as the recipe called for in 3 hours. I previously tried to anywhere from 3-5 hours. The dough barely doubled. Today it tripled rising in a warm room. And produced a beautiful and large loaf as it always should have. It will be 3 teaspoons of yeast for me every time in the future and maybe a little more water if the recipe with 3 teaspoons of yeast doesn’t provide the needed rise.
