So this has been one of our favorite go to recipes for the pellet grill - with a few modifications #1 - where I prepare it on the pellet grill, make sure you brine the chicken breast for at least an hour in advance of cooking so it doesn't dry out as much #2 throw the jalepenos in the food processor to quick dice them and mix that in with the cream cheese, spices and cheese. If you have kids who otherwise would toss out the pepper if they see it, this is a great hack to get them the flavor without worrying about parts of your meal being stripped out. #3 - I'd opt for butterflying a chicken breast instead of pounding to a certain flatness so it has a better chance of sticking together when cooked No offense to the recipe owner, just some thoughts on what's worked well for me and my audience at home ;-) Internal temp to 165 with instant read
