I used a mini muffin pan and reduced baking time a bit, but I ended up with the most amazing small Mazariner. My Swedish mom loved her traditional Swedish pastries with coffee and Mazariner were her favorite. She would have loved this recipe!
#1 - oil & water Do Not Mix! #2 - do Not heat fat or oil in your microwave. #3 - bread machines normally don't let you turn them on with the lid open. It is a Safety Precaution. #4 - the paddle in the bread machine will mix everything for you. Put the setting on 'dough' and let the Bread Machine do its job. I followed the instructions for the bread machine - 1 C of hot water (1 min in the microwave). I use extra light olive oil in my pizza crust. Also, I don't eat eggs, so almost 1/3 C of oil on top of the water. I put in 1 tsp of Mexican vanilla and it could have used more. Then the dry ingredients: 1/4 C of natural sugar, a bit of salt, and a heaping T of soy flour that is my egg substitute (along with that extra bit of oil in the beginning. 3 C of unbleached bread flour to cover the liquid so no liquid is coming through (I had put the bread machine on a time delay). 2 tsp of bread machine yeast on top of the flour (it might have taken a little more). Close the lid, plug it in, set it to Dough Cycle, and time delay (if you want). I pulled out a bit of dough at a time, flattened it into a circle, and cut it into 4 pieces. My air fryer browns better if whatever goes into it (not okra to be fried) has a little oil in it. So I dredged the pieces of dough in some extra light olive oil. I set the air fryer at 360 degrees for 3 min, turned the bread over after the 3 minutes, and cooked them 3 min more. They were still lighter than pizza dough or pretzels, but did not have the airholes that the beignets from Cafe du Monde has. And you can still dust them with powdered sugar.
